Since 2018, Copal Tree Distillery has been crafting award-winning Copalli Rum, championing sustainable agriculture in Southern Belize. Situated adjacent to the lodge and organic farm, our eco-conscious spirit distillery meticulously produces premium organic rum using native heirloom sugarcane.

From Farm to Bottle:
Crafted Entirely by Us

Every step of Copalli Rum’s journey, from growing and harvesting to distillation, aging, bottling, and packaging, takes place entirely on the Belize property.

The spirit distillery was intentionally designed with zero environmental impact in mind and operates as a closed-loop system, prioritizing sustainability at every level.

Root to Rum

Copal Tree Farm, next to the distillery and lodge, grows the black and red heirloom sugarcane used for Copalli Rum. After harvesting and juicing the organic, non-GMO sugarcane, leftover fibers (bagasse) fuel the distillery’s boiler, and the ash and spent rum wash (vinasse) return to the fields, enriching the soil. Even the excess water from distillation is returned to the fields, ensuring nothing goes to waste and minimizing environmental impact.

Distilled with Purpose

At Copal Tree Distillery, we use both pot and column stills to create distinct styles of rum. Pot stills, ideal for small batches, produce rich, flavorful spirits. 

Our Copalli Barrel Rested Rum is distilled in pot stills and aged in used American Oak bourbon barrels, which enhance the rum’s natural character without the environmental cost of new barrels.

Column stills allow faster distillation and a cleaner, more neutral spirit. Our Copalli Cacao Rum is distilled in a column still and infused with roasted organic cacao nibs, while Copalli White Rum blends both methods for a smooth, balanced finish.

Bottled Responsibly

Packaging plays a significant role in our overall environmental impact. By combining thoughtful packaging choices with efficient production practices, Copal Tree Distillery generates less than half the industry average of carbon emissions per bottle.

We’re committed to keeping our footprint as small as possible, which is why we intentionally avoid secondary packaging, gift boxes, and inserts—less waste, same exceptional rum.

Simply Exceptional Rum

Copalli Rum is crafted from just three pure ingredients: fresh-pressed organic sugarcane juice from Copal Tree Farm, pristine rainwater, and natural yeast. No molasses. No added sugar. Just a clean, vibrant rum that embodies the spirit of the rainforest.

Our single estate collection includes Copalli White, Cacao, Barrel Rested, and 5-Year Aged Rums. White Rum has a crisp profile, Cacao Rum is infused with roasted cacao nibs, and Barrel Rested Rum matures 10–14 months in bourbon barrels for deep, complex flavors.

Copalli Rum is featured at Copal Tree Lodge’s on-site Rum Bar, included in the Farm-to-Table All-Inclusive Package, and available for purchase at our fly and gift shop.

The farm produces its own coffee beans, vanilla, cacao, and spices. It grows organic rum and its distillery, Copalli Rum, is one of ten certified organic rum distilleries in the world. Copalli Cacao Rum is very good, buy some and take home. Take the distillery tour!”
