Inside the Farm
At Copal Tree, nature and wellness are deeply intertwined. Our certified organic farm and lodge garden grow most of the ingredients served in our restaurant, nurtured in nutrient-rich, chemical-free soil.
From sugarcane and cacao to fruit orchards and sustainably raised livestock, our vibrant farm and garden inspire our seasonal cuisine year-round. Join our agricultural guide for an intimate tour and discover the origins of the ingredients that bring each dish to life.

Belize’s Largest Criollo Plantation
Cacao Nursery
Nestled behind the main vegetable garden under a thatched-roof palapa, our Cacao Nursery is home to thousands of grafted cacao plants, carefully cultivated before being transplanted into the jungle understory surrounding the lodge.
In 2013, we planted 83 acres of organic Criollo cacao, making Copal Tree one of Belize's largest cacao plantations. The nursery also grows aromatic spices like cardamom, nutmeg, vanilla, and allspice, enriching the farm’s diversity.


Produces Award-Winning Copalli Rum
Sugarcane Fields
Copal Tree Farm's sugarcane fields grow black and red heirloom cane, the key to Copalli Rum’s award-winning flavor. These organic, non-GMO sugarcane varieties are prized for their rich, flavourful juice.
Cultivated with a light touch, our sugarcane farming minimizes disruption to the surrounding ecosystem, allowing jungle wildlife like jaguars, monkeys, and birds to thrive. Our regenerative practices work with nature, supporting biodiversity and letting the land flourish.
